I’m honestly really excited to show you guys this recipe. Usually most of my recipes are inspired by something that I have eaten before. However, this one was completely created in my head. Sure, maybe there are other recipes similar to this one, but I definitely thought of it on my own regardless. Today, I’m going to be showing you how to make this delicious warm sweet potato farro salad. It’s cozy, warm, inviting, nutty, and a little bit tangy. This salad is perfect for a chilly week night at home when you’re feeling extra cozy.
Warm Sweet Potato Farro Salad
This recipe is pretty simple, but the ingredients are probably a little different than what you normally cook with. Have you ever had farro before? It’s a type of grain of a certain wheat species. It looks a lot like oatmeal, but it’s eaten like rice. Farro has a certain nuttiness to it that I really enjoy. Unlike rice, it’s a little bit more solid when cooked, which makes it perfect for any kind of salad.
Another fun item that I really wanted to add was green apple. I had bought a huge bag of green apples a week ago when I made some acorn squash soup. I only needed one apple but the store only had bags as it’s still not apple harvesting season here yet. Because of this, I wanted to incorporate apples into this salad while making it savory. I am honestly so glad I did this, because it’s absolutely delicious. Adding the tang from the green apple gives a different flavor profile to the entire dish.

You can eat the salad plain as is, or add your favorite dressing on top. I have a secret hack for a vinaigrette that I highly recommend you try. For this, all you need is your favorite jam and apple cider vinegar! You use 1 tbsp of jam to 1 tbsp of ACV and mix well together. That’s it! You’ve now created a delicious vinaigrette for your warm farro salad!
Recipe for Warm Sweet Potato Farro Salad
For this recipe you’re going to need farro, a sweet potato, an onion, an apple, garlic, sage, garlic powder, salt, and onion powder. Of course the spices are up to you, but I have a weird obsession now with sage.
To cook the farro, I use my handy rice cooker. You use 1 cup of farro for 2.5 cups of water. I just press the white rice button and check up on it after about 20-25 minutes. If you don’t have a rice cooker like me, you can cook this over the stove! Add the farro and water to a pot and bring to a boil. Cook until tender, about 20-25 minutes. When the farro is done, drain any excess water.
While the farro is cooking, you will bake the chopped sweet potato at 375ºF for 35 minutes. On the sweet potato is where I added all of the spices! When both the farro and the sweet potato are done, you will cook the chopped apples and onion in a sauce pan. First, add your garlic to a medium-high heated pan (you can use oil or nonstick spray for this).
Once fragrant, about 2 minutes, add the onion and cook for 3-4 minutes. Then add the apples and cook for another 4 minutes. Now add the sweet potato and mix. Then add the farro and mix well. Here you can add any more spices, some salt, or even drizzle your dressing on top. I like to leave it plain and serve, allowing each person to season as they wish.
This recipe serves 4 or 2 really hungry people! I like to have leftovers for the next day and eat a COLD sweet potato farro salad. Just as delicious, just not as cozy!

Ingredients
- 1 cup farro
- 2.5 cups water
- 1 green apple, diced
- 1 medium sweet potato, diced
- 1 yellow onion, chopped
- 1 tsp sage
- 1 tsp garlic powder
- 1/2 tsp onion powder
- 2 garlic cloves, minced
- Salt, to taste
- Optional: oil for cooking
Instructions
- Preheat oven to 375ºF
- Add the water and farro to a pot.
- Bring the water to a low boil.
- Cook for 20-25 minutes, until the farro is tender.
- On a greased baking sheet, add the sweet potatoes.
- Cover with sage, garlic powder, onion, and a pinch of salt
- Bake for 35 minutes, or until sweet potato is soft
- In a medium sauce pan, add a little bit of oil or noncook spray
- Cook minced garlic until fragrant over medium-high heat, 2 minutes
- Add onion and cook, 3 minutes
- Add green apple and cook, 3 minutes
- Add the sweet potato and mix
- Add the farro and mix well.
- Feel free to season or salt some more at this point
- Serve immediately with your favorite dressing
Notes
To make my famous vinaigrette, use 1 tbsp of your favorite jam and 1 tbsp of apple cider vinegar. Mix well and serve over salad.
