The cold season is the time of year when I get really into baking! If you follow me on Instagram, you’ll usually see all of the things I cook and bake in my stories! However, one of my favorite things to make is cookies! If you’re vegan, you know how annoying it is to find a normal recipe sometimes. How many times have you looked up what should be an easy recipe and it ended up asking for something ridiculous like psyllium husk?? Well, I have found the perfect recipe for making some really tasty vegan chocolate chip cookies!

For this recipe you’re going to need:
- 1 cup of flour, I used unbleached all purpose.
- 1/4 cup of sugar
- 1/4 of brown or coconut sugar, I used coconut for this batch but highly recommend brown.
- 1/2 tsp of baking soda
- 1/4 tsp of salt
- 1/3 cup of chocolate chips, I added a wee bit more because I have no self control
- 2 tbsp of milk, I added an additional 1-2 tbsp to make the dough stickier and less crumbly
- 2 tbsp of oil
- 1/4 tsp of vanilla extract
Combine all the dry ingredients in a bowl, then add the wet ingredients forming a dough. Once the dough is formed, you can put the bowl in the fridge for a couple of hours or if you’re like me, I popped it in the freezer for 20 minutes until the dough ball is cold.
Once it’s cold, I formed the dough into little balls and placed on the greased pan. Pop it in the oven at 325ºF for 11 minutes. Let them cool for 10 minutes to harden and then devour all in one sitting.
