There a few things I love more than breakfast. I tried doing the whole “skip breakfast and eat more later” trend, but nothing beats breakfast food. Surprisingly enough, I am a savory eater. Anything savory and delicious needs to be in my stomach as soon as reasonably possible. However, I still crave some sweet pancakes every so often! So I decided to come up with the easiest vegan banana pancakes in existence. It’s 2 ingredients and if you follow my blog, this probably looks pretty similar!
The Easiest Vegan Banana Pancakes
One of the biggest problems with vegan recipes is how complicated they always are. Sometimes I just want a simple pancake! There’s this place in our town that I just found out has vegan brunch options and I’m so excited about it. However, they don’t make vegan pancakes or waffles! It blows my mind because most people have all the ingredients they need right at home! It doesn’t take fancy ingredients to make a simple pancake. Flour, oil, soy milk, salt, and some other simple things and you’ve got yourself the perfect pancake! I hope they make some soon.
For this recipe, I wanted to go even simpler. Why? Mostly because I’m so lazy in the mornings. The last thing I want to do when I wake up is measure out ingredients to make pancakes. The second I find a pancake mix that makes my life easier, I will let you know, trust me.

This recipe is actually pretty much the same recipe as my 2 ingredient cookies! The measurements and process to cook is much different so I thought I would make an entirely separate blog post for this because they really are two different things.
Recipe for Vegan Banana Pancakes
For this delicious recipe, you’re going to need 3 ripe bananas and 1 cup of quick oats. That’s literally all you need. You can obviously change it up by making more, but I found this ratio to make the perfect little pancakes!
In a bowl, mash the three bananas until a nice big mushy mess. Then, add the oats on top and mix together until the oats are completely coated in the banana, otherwise it will crumble. If you got unlucky and have bananas that are not that ripe, thus not as mushy, feel free to add a splash of non-dairy milk to make it a little softer to manipulate.
You can cook the pancakes on either an electric griddle or a frying pan. I highly recommend using a griddle because it will keep an even temperature the whole time. If you use a frying pan, you run the risk of the pan getting too hot after a few cakes and can start to burn the outside edge.
Scoop the “batter” onto the griddle and flatten down with your spoon until you shape it into a nice flat circle. I left mine a little bit thick because I wanted a nice thick stack of pancakes! Wait around 2-3 minutes before flipping. Be careful with the flip as these are not like regular pancakes! They can easily fall apart if handled too roughly (me, am I right?) Do this to each pancake until you use up the whole batter. Serve immediately! Top with whatever fresh fruit you want and drizzle some maple syrup for the perfect vegan banana pancakes.

Ingredients
- 3 ripe bananas
- 1 cup of quick oats
Instructions
- In a bowl, mash the bananas completely
- Add the quick oats on top and mix with a spoon until completely mixed with the banana. No dry oats allowed!
- On a griddle (or frying pan on medium/low heat), scoop the "batter" on.
- With your spoon, flatten the batter to the thickness and size you want the pancake to be
- Cook 2-3 minutes each side
- Flip carefully as this is not a regular pancake and can easily fall apart
- Serve immediately with fresh fruit and maple syrup
- Made 5 little pancakes
Notes
If your bananas were not ripe enough, feel free to add a splash of non-dairy milk to soften up the batter!
