i am SO obsessed with this sweet potato casserole!

i am SO obsessed with this sweet potato casserole! here’s the recipe if you want to try it out

- 3lbs sweet potato, peeled, cubed
- 1c brown sugar (i used light brown sugar)
- 3tbsp butter, softened (or melted)
- 2tsp cinnamon
- .5 tsp salt
- 1/2 cup milk
- 2 cups mini marshmallows

preheat oven to 375°F
boil potatoes in water until very soft
mash potatoes to desired consistency, i like some chunks!
add brown sugar, butter, cinnamon & salt—stir and make sure butter melts
add milk in slowly while stirring
transfer to casserole dish and add marshamallows
bake for 25-30 mins or until marshamallows have a nice toasty look on top!
