It was quite an experience, and since then I have wanted to do some more! The jams I made I ended up gifting to friends and family and I wanted to do the same this year! Strawberry Lemonade Marmalade
In 1880, Frank and Edmund Ball purchase the Wooden Jacketed Can Company with $200 from their Uncle George. Four years later, The five Ball Brothers begin manufacturing glass jars in Buffalo, NY. 135 years later, here we are creating our own special memories canning!

I am so happy there was enough of the marmalade to fill all four jars! A great way to show off your canning skills is by gifting these! I decorated them by adding a little chalkboard label and some jute string to make it look super adorable!
Ingredients
- 1/4 cup thinly slices lemon peel (about 2 large)
- 4 cups crushed strawberries (about 4 1 lb containers)
- 1 Tbsp lemon juice
- 6 Tbsp Ball® RealFruit Classic Pectin
- 6 cups of sugar
- 7 Ball® (8oz) half-pint glass preserving jars with lids and bands
Instructions
- Prepare boiling water canner. Heat jars in simmering water until ready to use. DON'T BOIL. Wash the lids and set them aside.
- Combine the lemon peel with water to cover in a big sauce pan. Bring to a boil over medium-high heat and boil for 5 minutes. Drain and discard liquid and return the peel to the pan.
- Add the strawberries and lemon juice. Mix. Gradually stir in pectin. Bring mixture to a full rolling boil that can't be stirred down, over high heat. Stir constantly!
- Add all of the sugar and stir to dissolve. Return to a full rolling boil. Boil hard for 1 minute, stirring constantly. Remove from heat and skim the foam.
- Ladle the jam into the hot jars leaving about 1/4 inch headspace. Wipe rim. Center lid on jar. Apply band until it is fingertip tight.
- Process in the canner for 10 minutes. Remove jars and cool. Check lids for seal after 24 hours. Lid should not flex up and down when center is pressed!
