Peanut Butter Energy Balls | Vegan & Delicious

One of the things that I find hard to quit is my love for snacks. I also just don’t want to quit that habit. Snacks are great. However, it can be really easy for me to mindlessly eat too many and get little to no nutritional value for it. So I always try to be more mindful about what I choose for snacks. The best way to do that? Make your own! With my everlasting love for peanut butter, it obviously was my first choice. So I came up with these peanut butter energy balls that are seriously so delicious and actually a filling snack!

If you check Pinterest, you’ll probably find a bunch of recipes similar to mine. However you clicked this one, so here we are. If you’re looking for an easy make-ahead snack you can have for the week, work, school, or even hikes, then you’ve definitely come to the right place.

If you’re feeling extra, you can add more toppings into it like nuts, seeds, or even chocolate chips. The possibilities truly are endless with toppings.

Recipe for Peanut Butter Energy Balls

For this recipe you’re going to need oats, preferably quick oats, pitted dates, peanut butter, and maple syrup. That’s it! Just four simple ingredients. First, you need to soak 10-15 dates in warm water to soften them. Also, make sure they are actually pitted. Sometimes there’s a rogue pit that equipment may have missed.



Next, add all the ingredients into a food processor or high speed blender. I use a food processor. Pulse a few times to start to process of blending. It will be a little bit dry, so at this point you’re going to add 1 tbsp of water to help soften and bind it. Process until completely mixed, scraping down the sides of the food processor as you go.

Now you can start to scoop up some of the mixture and roll it into little balls, whichever size you’d like. From here, pop them in the refrigerator for an hour to harden slightly. When done, enjoy whenever you like!

Peanut Butter Energy Balls | Vegan & Delicious

Ingredients

  • 1/2 cup oats, quick
  • 1/2 cup peanut butter, creamy
  • 1 tbsp maple syrup
  • 15 pitted dates

Instructions

  1. Soak your dates in warm water for about 10 minutes. Make sure all the pits are actually removed.
  2. Add all the ingredients into a food processor or high speed blender.
  3. Pulse a few times and then add 1 tbsp of water.
  4. Process until completely blended.
  5. Scoop the mixture and roll into balls.
  6. Store in the refrigerator for an hour to harden or eat right away.
  7. Enjoy!

I don’t see my stretch marks as battle scars, ti I don’t see my stretch marks as battle scars, tiger stripes, or a badge of honor. To me, they’re just skin stretching—because that’s what skin does. It doesn’t have to carry a deeper meaning or be a symbol of anything. It doesn’t have to be proof that I’m a mom to make me feel like a mom. My motherhood isn’t defined by the marks on my body; it’s in the love I give, the patience I practice, and the moments that shape this journey.

I don’t need to call my stretch marks anything to accept them, and for me, that’s freeing. They’re not good or bad, beautiful or ugly—they just are. A natural part of being human, of growing, of changing.

That being said, if giving them a name or a purpose helps you embrace them, that’s amazing! Every mom’s journey is different, and so is the way we process the changes that come with it.
