Sometimes that I struggle with a lot if figuring out what I want to do for breakfast. I feel like my mind and creativity is trumped by my laziness. Sure, who doesn’t want delicious fluffy pancakes for breakfast or a smoothie bowl staged to perfection? However, I live in the real world. That’s the world where I snooze my alarm 72 times and then lay in bed for hours trying to figure out the meaning of life. Because of this, one of my go-to breakfasts is overnight oats. You can make it the night before when I have a tiny shred of motivation left and have it ready to eat in the morning. Today, I’m going to show you my absolute favorite PB overnight oats recipe. It’s protein packed, gives you tons of energy, and is actually so delicious!

The Perfect PB Overnight Oats
You have probably looked up overnight oats recipes on Pinterest, I have no doubt. There’s thousands of different ways people are making them! Some of them look delicious, others have turned out to be gross. This recipe of mine is fool proof. It’s simple, doesn’t require crazy ingredients, and actually tastes amazing if you love peanut butter.
I have also tried a lot of different of these recipes and have noticed that not only do I not enjoy the taste very much, they don’t keep me full. I think using the peanut butter in this recipe is the perfect way to have a filling breakfast that will keep you energized and satisfied for hours.
Also, if you forget to make your oats at night, you can still have the same measurements in a bowl and have it hot. I jist personally prefer cold oatmeal because it tastes more like a treat, especially in the Summer.

If you’re feeling saucy, you can even add fruit to the oatmeal as a topping or really anything. Nuts, bananas, chia seeds, flax seeds, you name it. I usually eat it as-is because it’s the easiest for me in the morning, but if I have time I’ll cut up some bananas and add that. I even used to add mini chocolate chips to it!
Recipe for PB Overnight Oats
For this recipe, you’re going to need quick oats, maple syrup, peanut butter, and vanilla almond milk. That’s it! The easiest breakfast you’ll ever make. Obviously you can switch things around by using gluten free oats, rolled oats, almond butter, cashew butter, or soy milk. You can make this recipe your own, but I’m giving you a simple guideline to get you started on your overnight oats journey.
The directions are as simple as adding everything into a mason jar and stirring it up! First add the milk to the jar. Th en add the maple syrup and stir those together. If you add the maple syrup at the end, it’ll change the consistency a bit. Then you can add the peanut butter and the oats. FOLD the peanut butter into the oats but do not mix completely. You want there to be chunks of peanut butter. If you blend it all together, it won’t really be as enjoyable (at least that’s my personal opinion. James seems to prefer it completely blended but he’s also silly.).

You can also make these in anything, it doesn’t have to be a mason jar it just looks cuter in one! You can mix it in Tupperware or a regular bowl you cover with plastic in the fridge.

Ingredients
- 1/2 cup oats, quick (rolled works as well)
- 1/2 cup almond milk (or any non dairy milk, sweetened)
- 1 tbsp of maple syrup
- 2 tbsp of peanut butter, creamy
Instructions
- Add the milk to a jar or container of your choice.
- Add the maple syrup and mix these two ingredients together.
- Add the quick oats and mix well.
- Add the peanut butter and fold into the oats. Do not overmix. You want globs of peanut butter.
- Cover and refrigerate overnight or at least two hours.
- Enjoy!
