When I was just starting out on my fitness journey years ago, I remember edamame. Edamame was a snack I was supposed to eat all the time. I would measure out edamame in this very tiny Tupperware and have it mid-day. I loathed edamame. Not that it’s not good; it’s delicious. I just felt like it was punishment for me. Too many years of junk food and lack of exercise and now my punishment is to eat edamame all the time. Don’t worry, I grew out of it. Which is great because this recipe for edamame fritters from Green Chef is amazing and so easy to make!
If you don’t know, Green Chef is a meal subscription service that delivers ingredients to you (with recipe cards) every week depending on your plan. You get all the ingredients you need to make your dinner, and get to keep the recipe cards forever! For someone who is usually really busy and quickly runs out of dinner ideas, this is my favorite service we use. Today we’re making pan-seared edamame fritters served over a pad Thai noodle salad.
