Hello friends! Today I wanted to show you my favorite recipe I created for vegan PB cookies. It all started when I was 5 years old—just kidding. I won’t be *that* kind of blogger. However, I did want to talk about a few of the ingredients that makes this recipe so amazing!

I like to think that I’m cool enough to have a “secret ingredient” to my recipes, and for this one…it’s maple syrup. After doing hours of research of other recipes and then doing testing for my own, I have come to the conclusion that what makes my vegan PB cookies so unique is the maple syrup I add to it. It’s not much, just a tablespoon, but I think it makes a huge difference to the taste.

Another thing I do a bit differently is I use brown sugar instead of regular cane sugar. The taste of the brown sugar mixed with the natural peanut butter gives it such a moist (blegh, I hate this word) and warm vibe. That’s basically it: my two special ingredients. Onward to the recipe for these scrumptious vegan PB cookies!

Ingredients
- 1 cup natural peanut butter
- 1 cup brown sugar
- 1 cup all-purpose flour
- 1 tsp baking soda
- 1 tsp baking powder
- 1/2 tsp salt
- 5 tbsp non-dairy milk, I used almond milk
- 1 tbsp maple syrup
Instructions
- Preheat the oven to 350ºF
- Add peanut butter and sugar to a bowl and mix until creamy
- Stir in milk and maple syrup
- Add flour, baking power, baking soda, and salt
- Mix well with a spoon or hands. It will get harder to mix together
- Scoop 1 tbsp of the dough, roll into a ball, and flatten with a fork on a sheet pan
- Bake for 10-13 minutes
- Let them cool because they’ll be really soft when they come out
