Whether you’ve been vegan for a while or you’re just starting out on the non-dairy route, you’ll know the problem with mac & cheese. In fact, this was one of the first “vegan” things I tried to do and I hated the taste of it. The problem with vegan mac & cheese is that it’s too complicated. Soak (expensive) raw cashews for 16 years. Boil carrots and potatoes, blend together with nooch and there’s your sauce. It’s all way too fancy and complicated for the average person. Sometimes you just want a simple mac & cheese, right? Well, I have created the perfect easy vegan mac & cheese powder for you! All you need is this powder, almond milk, and pasta and you’re ready to devour dinner.
Easy Vegan Mac & Cheese Powder
I know what you’re thinking. There’s no way you can make a vegan mac & cheese without using raw cashews you have to soak for 76 years. Well, I am happy to report that you can easily have dinner made in about 10-15 minutes without having to set a reminder to soak those nuts overnight. You can actually find a few different powders like this from other amazing bloggers, which I have used many times! However, I have perfected it to my taste and I think I elevated the powder by adding my own spices and amounts to it.
The secret ingredient here, like any cheesy vegan dish, is nooch. If you saw my previous blog post on my amazing tofu scramble, you’ll know that it’s the best invention ever created and how gross I am with it (read the blog post to find out what I do with nutritional yeast!)
Another very important ingredient for me is SMOKED paprika, not regular paprika. I absolutely love the smoky and savory tasted of smoked paprika and I truly believe it’s what makes this powder so amazing.

This recipe is perfect for those long days at work when the only thing you want to do when you get home is sit on the couch and watch TV. In just 10 minutes you could have an absolutely delicious mac and cheese!
Recipe for Vegan Mac & Cheese Powder
For this recipe you’re going to need nutritional yeast, all purpose flour, smoked paprika, garlic powder, onion powder, turmeric, sea salt, raw cane sugar, a tiiiny dash of cumin and chili powder.
Prepping is the easiest part! I usually make a huge batch of this recipe so that I’m not constantly prepping the powder every other week. Being able to just grab the jar, pour the amount on a pan and create a delicious mac & cheese sauce makes this my top recipe!
To create the actual mac & cheese, first start off by cooking your pasta. When it’s done, pour the pasta on to a strainer. In the same pot you used to cook the pasta is where you’ll create the sauce.
Pour the almond milk and the powder into the pot over medium-high heat. Continually whisk until the sauce thickens, 3-4 minutes. Once at a consistency of gooey cheese sauce, add the pasta and stir into the sauce. That’s IT. You’re done. It’s literally that simple.

This recipe makes about 2 cups of powder. Easily prep in five minutes and keep in a airtight jar for storage. Use as needed. Feel free to reduce or increase the recipes and even add your own spices!
Ingredients
- 1 cup of all purpose flour
- 1 3/4 cups of nutritional yeast
- 2 tbsp raw cane sugar
- 2 tbsp smoked paprika
- 4 tsp salt
- 1 tbsp onion powder
- 1 tbsp garlic powder
- 1 tsp turmeric
- 1/4 tsp cumin
- 1/2 tsp chili powder
- - 1.5 cups of macaroni, uncooked
- - 1 cup of unsweetened almond milk
- - 1/3 cup of mac & cheese powder
Instructions
- Add all of the ingredients into a large mason jar. Shake to mix. Store in the pantry and use as needed.
- Cook the macaroni as instructed on the box. When done, pour pasta into a strainer. Using the pot you just used for the pasta, pour the almond milk and the powder into the pot on medium-high heat. With a whisk, stir until the it thickens into a nice cheese sauce. Pour the cooked pasta in and mix until well coated. Enjoy!
