I went to an event recently in NYC for Bobo’s and they gave us this really adorable kit. The kit had everything you need to make your own oat bars. If you don’t know who Bobo’s are, they’re an amazing family-owned company that makes delicious oat bars! They’re healthy and flavorful! Today, I’m showing you how to make your own Bobo’s-inspired homemade cranberry walnut oat bars! Feel free to print the recipe and make some for yourself using any topping you want! You can also watch me make it on Youtube! This recipe is NOT the same as the kit I made, but still delicious and very much inspired by their amazing bars! Be sure to try their oat bars available in so many stores! They’re so delicious and filling!
Bobo’s was started on a rainy afternoon in 2003 by Beryl Stafford and her daughter “Bobo”. The baked oat bars soon became a Boulder, CO cafe favorite, and it’s no surprise to me! Even with their success, they have never compromised on the original recipe, small-batch baking process, or mother-daughter tradition.
I met both Beryl and Bobo at the event and they were the absolute sweetest! It would so heartwarming to see the individuals behind a product I love so much and to learn more about their story. Being able to recreate these oat bars in my own home, knowing how it all started, gave me such a sense of coziness and warmth.
Cranberry Walnut Oat Bars | Egg-Free & Vegan
These bars are surprisingly super moist and perfectly sweetened by the maple syrup Honestly, you’ll probably eat all of them by yourself after making them! The tanginess from the cranberries compliments the sweetness for an amazing flavor explosion. Adding the walnuts gave an overall soft snack a nice crunchy element it definitely needed.

Now, I was lucky enough to have a kit where I just dumped everything into a bowl and mixed, but I’m going to give you a measured recipe and directions on how to make these yourself at home. I highly recommend getting these tiny little pans for the bars. Honestly, they’re the cutest things! I can’t wait to make mini pumpkin bread in the Fall!

Recipe for Vegan Cranberry Walnut Oat Bars
The ingredients for the bars are so simple. All you need is oats, cane sugar, salt, coconut oil, water, baking soda, and maple syrup!
You mix all these ingredients in a bowl until thoroughly combined. Here is where you can get creative! Feel free to add ANY topping you want! Dried fruit, nuts, chocolate chips, whatever! I added cranberries and walnuts (like the recipe is called-duh!) but feel free to make it your own. In the greased pans, divide the mixture into both pans and press them down firmly.
Bake for 30-35 minutes, then let it cool for 20 minutes. Cut them in half and enjoy! I do recommend letting them cool as much as you can wait. They will be very warm and can easily fall apart.
And that’s it! Super simple! This recipe is:
- Nutty
- Tangy
- Moist (I hate this word but it’s totally moist)
- Absolutely delicious!

A super simple but utterly delicious vegan cranberry walnut oat bars recipe! Enjoy these soft, crumbly bars with any kind of topping you'd like, but the combination of the crunchy walnuts and tangy cranberries are to die for.
Ingredients
- 2 cups of oats
- 1/2 cup coconut oil, melted
- 1/2 cup cane sugar
- 1/2 cup chopped walnuts
- 1/2 cup dried cranberries
- 1/4 cup of maple syrup, if too dry add another 1/4 cup
- 1/4 teaspoon of salt
- 1/4 teaspoon baking soda
- 2 Tbsp of water, or more if too dry
Instructions
- Preheat the oven to 350 degrees
- Mix all the wet ingredients in a bowl.
- Mix all dry ingredients into the same bowl
- Stir with a spoon until all ingredients are combined completely
- Spray or grease your baking tins with oil
- Divide the mixture into both tins, or if you're just using one square pan, put it all in there.
- Spread the mixture evenly and press down to pack it in tightly.
- Bake for 30-35 minutes
- Let it cool for 20 minutes or it WILL fall apart! Cut them in half if you used the small tins like me, or into squares if you used a regular square pan.
- Eat all of it in one sitting
Notes
Feel free to change the toppings to whatever you like! Nuts, seeds, dried fruits, or even peanut butter! Have fun with it!
This recipe works well with rolled oats, but quick oats would work well too!
