Let’s be real here. We all buy way too many apples when we go apple picking in the Fall. The excitement of being able to pick your own off a tree and gather them is just too much for some of us to handle. I know I’m personally guilty of grabbing way too many and having them all slowly rot on the kitchen counter until it’s practically melted into the wood. If you don’t know what to do with all of your apples, you can do what I did and shove them into a bread! Today, I’m going to show you how I made this amazing vegan cinnamon walnut apple bread.
Cinnamon Walnut Apple Bread
Did anyone ask for a cinnamon walnut apple bread? I mean, probably not but I think it was a recipe we all needed. This recipe is actually very inspired by pumpkin bread. You really could use these exact ingredients and switch out the apple for pumpkin and get a pretty amazing recipe as well! However, today it’s all about the apple.
For all of my friends with nut allergies, don’t worry! I actually only put walnut on the top of the bread and is easily omitted without changing up the taste or texture at all of this cinnamon walnut apple bread! If you don’t have an allergy but hate walnuts, you can put whatever nuts or seeds you want on top. Think: pumpkin seeds, sliced almonds, cashews, you name it!

I was honestly surprised that the apple came through in this recipe. It was one of my biggest worries. You can really taste the apple, so make sure you choose a sweeter one, unlike the green apple!
Recipe for Cinnamon Walnut Apple Bread
For this recipe you’re going to need flax egg, flour, brown and white sugar, cinnamon, baking powder, allspice, vegetable oil, almond milk, banana, apples, and walnuts. Don’t be intimidated by flax eggs. I promise its the easiest thing in the world! Flax egg is basically one tablespoon of ground flax seed mixed with three tablespoons of hot water. You let it sit for a minute and it becomes a scrambled egg-like consistency. This works really well as a binder for most vegan baking recipes! I actually use this in place of eggs in those box treats you can buy like Duncan Hines or Betty Crocker.
First you preheat the oven to 350ºF. In a large bowl, add the flour, both sugars, baking powder, cinnamon, and all spice and mix well. Then add the flax egg, milk, oil, mashed banana, and mashed apples. I used a hand mixer to mix the ingredients together to make the thick batter. Now, add the chopped apples and fold into the batter.
Pour the batter into a greased loaf pan and add a handful of walnuts(or your seed/nut/topping of choice). I pressed the walnuts very slightly into the batter so it would stick to the bread when it was fully baked. Bake for 60-80 minutes depending on the size of the pan you used. You’ll know it’s done when you stick a knife or toothpick in and it comes out clean. This bread took about 75 minutes to cook completely.
Allow the bread to cool before removing from the pan. Serve on it’s own or spread some vegan butter and enjoy!

Ingredients
- 2 cups all purpose flour
- 1/2 cup brown sugar
- 1/2 cup raw cane sugar
- 1 flax egg (1 tbsp ground flax seed with 3 tbsp of hot water. Sit for 1 minute)
- 1/2 cup vanilla almond milk
- 1/2 banana, ripe
- 10.5 oz apple, mashed
- 1 apple, diced
- 1 1/2 tsp cinnamon
- 3 tsp baking powder
- 1/4 tsp allspice
- 3 tbsp vegetable oil
Instructions
- Preheat oven to 350ºF
- Chop 3-4 apples until you get around 10.5 oz of them
- Prepare the flax egg, set aside
- In a food processor, blend the apple until it looks almost like apple sauce, set aside
- Chop 1 apple into small cubes and set aside
- In a large bowl, sift the flour, baking powder, brown sugar, raw cane sugar, cinnamon, and allspice
- Mix well
- Add the flax egg, vegetable oil, mashed banana, mashed apples, and almond milk into the bowl
- Using a hand mixer or a whisk, mix the ingredients together until it creates a thick batter
- Add the chopped apple and fold into the batter
- Pour the batter into a greased loaf pan
- Grab a handful of walnuts and sprinkle over the top. I pressed the walnuts into the batter slightly so it would stick to the bread when baked
- Bake for 60-80 minutes depending on the size of your loaf pan
- Use a knife or a toothpick to check for doneness
- When they come out clean, pull the bread out of the oven and set aside to cool
- Serve with butter or eat plain and enjoy!
