I am the kind of person who likes to find the easiest recipes possible when it comes to lunch. We don’t have time for lunch. I can’t sit here and create an elaborate lunch with grains and fancy homemade dressings. I mean, I could.. but I’d rather not. This is my absolute favorite thing to make for lunch because it’s seriously the easiest thing ever and super versatile. You can add as many toppings to the sandwich and ingredients in the salad as you want. I personally keep it as simple as possible! If you’ve never had a chickpea salad sandwich, you’re missing out!

This recipe is painfully easy, versatile, filling, and delicious! You can make this as easy or as difficult as you want! You can change the bread, the dressing, the spices, the toppings, anything! This is how I make it.
Chickpea Salad Sandwich:
- 2 slices of oat nut bread (or any bread, obviously. You can even sub for a wrap, crackers, or veggies to dip in)
- 1/2 cup of chickpeas (I use Goya cans)
- 1 TBS of Just Mayo (or any vegan mayo. Can sub for any other dressing)
- Garlic Powder, to taste
First mash the chickpeas with a fork in a bowl. You want some whole chickpeas, don’t mash into oblivion. After, add the mayo and mix well. Then add the garlic powder. Mix again. Plop onto your bread and chow down!
If I’m feeling fancy, I’ll add some slices of tomatoes, lettuce, or even some cheese! What other toppings would you add to this?
